5 Cup Flour
4 Cup Cornmeal
1.5 Cup Sugar or Sugar Substitute
1/2 Cup Baking Powder (or 8 Tbl)
2 Tsp Salt
1 Cup Butter Flavored Shortening
1.5 Cup Bulk Mix
1/4 Cup Egg Beaters or 1 whole egg
1/3 Cup Milk
1. For BULK MIX - Combine all ingredients into a food processor and pulse until the Butter Flavored Shortening is incorporatesd into the dry ingredients and resembles coarse sand.
2. Store dry mix in an airtight container or ziploc bag.
3. To mix up a batch equivelant to a store bought box of "Jiffy Cornbread Mix" combine 1.5 cups of the BULK MIX with egg and milk.
4. Bake at 400* for 15 - 18 minutes.
This recipe makes enough dry bulk mix for 48 muffins. Each batch contains 6 muffins.
If you prefer you can omit the shortening from the dry bulk mix and add 2 Tablespoons of oil to each batch prior to baking.
