I made a delicous crepe which took less than 5 minutes from start to finish. If you've never made a crepe you are really missing out on something special. For just a few pennies, using ingredients you probably already have in your kitchen, you can quickly turn left overs into a gourmet treat or delight guests with a special dessert . They can be made in advance and even frozen - but they are so quick and easy I always make them fresh to order.
I pureed a fresh banana with a little sugar free vanilla syrup for a healthier but tasty alternative to a full blown banana pudding. Then I added in some fresh strawberries, rolled them up and finished with a splash of whipped cream and some additional berries. Voilà - a delicious brunch favorite or a fabulous dessert is ready.
