
I know this happens frequently to many people. So you may be wondering what fabulous dinner we whipped up on such a difficult night.
Well I popped in to my hubby's newly remodeled store and picked up some 20 count shrimp and a box of linguini. This took less than 10 minutes and allowed me to see the finished store since I missed the ribbon cutting this morning. Then I came home and immediately put some water on to boil. While it came to a boil I cleaned and peeled the shrimp. As soon as the water came to boil I added the linguini to the pot and set the timer for 10 minutes. Then I threw a red pepper and a vine ripened tomato into my vitamix. Added crushed garlic, herb d' provence, Mrs Dash, Hungarian paprika, Hawaiian sea salt, heavy cream, crushed black pepper, a splash of Moscato, and a dash of lemon juice. Pureed it until smooth and poured into a saute pan. Then I added the shrimp and sauteed until thoroughly cooked. By then the pasta was ready to be drained. Afterwards I tossed it with the red pepper cream sauce and added some freshly picked basil that I quickly cut into flavorful ribbons. The main dish was done just as my husband pulled some fresh garlic bread from the oven and poured me a glass of wine.
Not bad for 15 minutes work!
Just because you are exhausted or pressed for time don't think you must resort to a substandard poor quality dinner. With a bit of inspiration and a quick cooking dish you can enjoy a restaurant quality dinner in less time than it takes to drive to a "fast food" restaurant.
